Muffins Everywhere

The other day I suddenly felt strangely energized and decided during my charges’ naps to bake muffins! (Yeah sometimes I don’t even understand these banking urges- I’ve just gotta bake something!)
Well they turned out fantastic! And since it was a Tally original (I combined two different recipes cause I didn’t have enough ingredients) I have graciously decided to share my genius with you humble people. (I’m feeling facetious)
Vanilla Glaze:
2-3 cups powder sugar
1 teaspoon vanilla
1 tablespoon water
Mix together and set aside!
Crumb Topping:
1/2 cup butter softened
1/2 cup of brown sugar
1/4 cup white sugar
1/2 teaspoon of cinnamon
1/2 teaspoon pumpkin spice
1/4 teaspoon salt
1 cup flour
  1. Melt butter in microwave.
  2. Mix dry ingredients in small bowl, add melted butter and mix with a fork. Set aside.
Muffin Batter:
1 cup coconut oil (vegetable oil would work too)
1 cup brown sugar
2 cups white sugar
4 eggs
1 teaspoon of cinnamon
1/2 teaspoon of nutmeg
1/2 teaspoon pumpkin spice (could always add more)
1/4 teaspoon of cloves
1/4 teaspoon of ginger
1 teaspoon of salt
2 teaspoon of baking soda
3 1/2 cups of flour
2/3 cups of water

  1. Preheat oven to 350 degrees.
  2. In a separate bowl mix all dry ingredients and set aside.
  3. Beat coconut oil and eggs together.
  4. Slowly add in dry ingredients and water.
  5. Pour mix into lightly greased muffins tins (I just used the standard size tin) Sprinkle with crumb topping and bake 15-20 minutes. 
  6. Remove from tins and let cool on racks.
  7. Drizzle with glaze and enjoy!
